Rounding Out Summer with this Frozen Cuba Libre Cocktail

This post was supposed to happen last week to give one last hurrah to summer cocktails. Hurrican Sally had other plans and knocked out our power for several days. So on the bright side, you'll get to enjoy one more week of summer in a glass. I love the classic Cuba Libre cocktail. Consisting of simply rum, lime juice, and cola (or Diet cola for those of you watching your calories), the Cuba Libre is simple in its ingredient list yet complex in taste. To make this cocktail even more "summery", I made it into a slush by freezing the cola and using a blender to mix everything into the ultimate frozen cocktail. I will say, after making this one, I would recommend mixing the cola and rum together prior to freezing, which makes it a little easier to blend. Since the rum does not completely freeze, this makes it into the perfect consistency for a slush. I hope you enjoy this one. If you try it, let me know what you think.
